Please find attached the unedited footage of Damien Leblanc's intake video (season 4, episode 6). As per your request, I've attached a transcript. You'll find my observations in italics.
My initial thoughts are:

Host: Damien, or should I call you The Bad Boy of Baking?
Damien: flirtatious grin and a wink Damien is fine, thanks.
Host: Welcome to Bake-it! and our Halloween competition.
Damien: Thank you. It's an honor to be here.
Host: You're not exactly like most of our celebrity contestants, but viewers made it very clear that they wanted you on the show.
Damien: I'm very fortunate with the dedication from my fans. They have made a huge impact on my family's life.
Damien: Becoming The Bad Boy of Baking was not exactly my life's mission. But I do come from a long line of good cooks and bakers, and somehow this became my part in that.
Host: Well, you're very good at it.
Host: Are you excited about the competition?
Damien: Yes, excited and honored. And very much looking forward to working with Caroline Mathis.
Host: Ah, yes, Miss Mathis, could you tell us a little bit about why you chose her?
Damien: pauses, glances off into the middle ground for a moment before clearing his throat There was something about the way she moved in the kitchen, the preciseness, the execution of her words. Her answers to the questions… she just seemed… I don't know different than what I'm used to.
Damien: chuckles And her food looked fucking delicious.
Damien: Oh, can I say fuck on here?
Host: laughs The powers that be will let us know.
Host: Are you anticipating there being difficulties between you and Miss Mathis?
Damien: I hope not. I'm hoping that we make a good team, that my strengths and her strengths can complement and support each other, and bring us all the way to the finale.

That moment where he looks off for a moment before clearing his throat? That was the moment the host pulled up Caroline's head shot.
I could be wrong, but I think he's got the hots for her. That soft, dreamy look in his eyes? Correct me if I'm wrong, but he picked her, didn't he? I think the bad boy of baking has a crush on Snow White.
