Cake Recipe
Here is a modern version of the cake Luna made that Hunter and the threshing crew so enjoyed.
Creamy Poke Cake
1 box vanilla cake mix
⒈/⒉ cup vegetable oil
3 eggs
1 cup water
1 14-ouncecan sweetened condensed milk
1 cup heavy whipped cream
1 8-ounce package cream cheese, softened
1 teaspoon vanilla extract
1 cup powdered sugar
Fresh strawberries
Preheat oven to 350 degrees.
Mix cake mix with oil, eggs, and water (following cake mix directions for mixing and baking times).
When the cake is baked, remove the pan from the oven and poke holes all over the top of the cake. The end of a wooden spoon handle or spatula works well. Pour the sweetened condensed milk over the top of the warm cake, and then spread it out so it soaks into all the holes.
Allow the cake to cool completely.
When the cake has cooled, whip the cream until soft peaks form. Mix with the cream cheese, vanilla, and powdered sugar, on medium speed until well combined.
Spread the frosting over the top of the cake. Refrigerate at least four hours, or overnight.
When ready to serve, top each slice with strawberries (or raspberries). If preferred, you can also top with chocolate chips or curls.
Store any leftover cake, covered, in the refrigerator for no more than three days.
